Ingredients

  • 1/4 cup butter
  • 2 Tbsp chopped onion
  • 1/3 cup chopped celery
  • 1 Tbsp chopped parsley
  • 1/4 tsp dried sage
  • 1 cup soft bread crumbs
  • 1/2 cup coarsely shredded Cheddar cheese
  • salt and pepper
  • 1 1/2 lb fillet of sole
  • 3 Tbsp butter
  • 3 Tbsp flour
  • 3/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Preheat oven to 375°F.
  2. Melt 1/4 cup of butter in a skillet. Add chopped onion and celery, cook until tender.
  3. Remove from heat and stir in chopped parsley, dried sage, bread crumbs, and shredded Cheddar cheese.
  4. Sprinkle the fillets of sole with salt and pepper. Spoon some stuffing over each fillet.
  5. Roll up each fillet and secure with a toothpick.
  6. Place the stuffed fillets in a buttered, shallow baking dish.
  7. Bake for 30 minutes until golden and cooked through.
  8. While baking, prepare the sauce as desired.
