Ingredients

  • 4 cups diced cooked turkey
  • 3/4 cup mayonnaise
  • 1 can (10 1/2 oz.) cream of chicken soup
  • 2 cups chopped celery
  • 4 hard-cooked eggs
  • 1 teaspoon salt
  • 1 teaspoon minced onion
  • 2 tablespoons lemon juice
  • 2 pimentos, cut up (optional)
  • 2/3 cup shredded Cheddar cheese

Instructions

  1. Mix all ingredients except the cheese in a large bowl.
  2. Pour the mixture into a large shallow 1 1/2-quart baking dish.
  3. Sprinkle shredded Cheddar cheese on top.
  4. Chill the dish for several hours or overnight.
