Ingredients

  • 1 large fryer chicken, cooked and chopped
  • 2 (5 oz.) cans small noodles
  • 1 large onion
  • 1 large bell pepper
  • 1 stick oleo (butter or margarine)
  • 1 can mushrooms
  • 1 cup chicken broth
  • 1 can Ro-Tel tomatoes
  • 1 can English peas
  • 1 lb. Velveeta cheese

Instructions

  1. Sauté chopped onion and bell pepper in chicken broth until tender.
  2. Add canned mushrooms and Ro-Tel tomatoes, then simmer until flavors meld.
  3. Cook noodles until al dente, drain, and set aside.
  4. Mix cooked chicken, cooked noodles, and sautéed vegetables with the mushroom and Ro-Tel mixture.
  5. Add Velveeta cheese last, stirring until melted and well combined.
