Ingredients

  • 1 cup sugar
  • 1/2 cup shortening
  • 2 eggs
  • 3 mashed bananas
  • 1 tablespoon sour cream or buttermilk
  • 1 teaspoon baking soda
  • 2 cups flour
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Cream the shortening and sugar until light and fluffy.
  2. Add eggs and mix well.
  3. Stir in mashed bananas and sour cream or buttermilk.
  4. Sift together baking soda and flour.
  5. Gradually add the flour mixture to the wet ingredients, mixing until combined (batter may look curdled).
  6. Pour the batter into a greased 9 x 5 x 2-inch loaf pan.
  7. Bake at 350°F (175°C) for about 1 hour, or until a toothpick inserted in the center comes out clean.
