Ingredients

  • 3 extra-ripe medium bananas
  • 2 cups sugar
  • 1/2 cup butter or margarine, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped nuts (optional)

Instructions

  1. Puree bananas in a blender; should be 1 1/2 cups.
  2. In a bowl, beat sugar and butter until light and fluffy.
  3. Beat in eggs and vanilla extract.
  4. Add the pureed bananas to the mixture.
  5. Combine all dry ingredients: flour, cocoa powder, baking powder, cinnamon, and salt.
  6. Add dry ingredients to banana mixture and beat until well blended.
  7. Stir in chopped nuts if using.
  8. Pour batter into a well-greased 9 x 13-inch baking pan.
  9. Bake at 350°F (175°C) for 30 to 35 minutes.
  10. Cool on a rack for 10 minutes.
  11. Cut into squares and serve.
