Ingredients

  • 9 oz. chocolate wafers
  • 3/4 stick butter
  • 1 1/2 c. whipping cream
  • 12 oz. semi-sweet chocolate, chopped
  • 1 lb. cream cheese
  • 3/4 c. sugar
  • 4 eggs
  • 1 tsp. vanilla
  • cherry pie filling
  • whipped cream

Instructions

  1. Butter a 9-inch pan.
  2. Finely crush the chocolate wafers.
  3. Cut in the butter until the mixture is well blended.
  4. Press the crumb mixture into the bottom of the prepared pan and up the sides to 3/4 inch of the top.
  5. Refrigerate for 30 minutes.
  6. Preheat the oven to 350°F (175°C).
  7. Heat the whipping cream and chopped semi-sweet chocolate over low heat until melted, stirring constantly.
  8. Allow the chocolate mixture to cool for 10 minutes.
  9. In a separate bowl, beat the cream cheese and sugar until smooth.
  10. Beat in the eggs one at a time.
  11. Add the cooled chocolate mixture and vanilla, stirring well.
  12. Pour the filling into the prepared crust.
  13. Bake for 1 1/4 hours.
  14. Cool completely before refrigerating.
  15. Serve topped with cherry pie filling and whipped cream.
