Ingredients

  • 1 cup mashed bananas
  • 1 cup sugar
  • 3/4 cup salad oil
  • 2 eggs
  • 2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup finely grated carrots
  • 1/2 cup nuts or pecans

Instructions

  1. Combine mashed bananas, sugar, salad oil, and eggs in a large bowl.
  2. Beat with an electric mixer for 2 minutes or 300 strokes by hand.
  3. Sift together all-purpose flour, baking soda, salt, and cinnamon.
  4. Fold the dry ingredients into the banana mixture.
  5. Stir in the grated carrots and nuts or pecans.
  6. Pour the batter into a greased and floured 9 x 5 x 2 1/2-inch loaf pan.
  7. Bake at 350°F (175°C) for 55 to 60 minutes.
  8. Cool in the pan for 10 minutes.
  9. Remove from the pan and cool on a rack.
  10. Wrap and store overnight before slicing.
  11. You may substitute zucchini for the carrots.
