Ingredients

  • 1 1/2 cups sifted flour
  • 1 cup sugar
  • 1/2 teaspoon soda
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 3/4 cups oatmeal
  • 1/2 package caramel or chocolate chips
  • 1 teaspoon cinnamon
  • 3/4 cup oil
  • 1 beaten egg
  • 1 cup mashed bananas
  • 1/2 to 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sift together the flour, soda, nutmeg, salt, and cinnamon in a bowl.
  3. Add oil, beaten egg, mashed bananas, oatmeal, chips, and chopped pecans to the dry ingredients.
  4. Mix well until combined.
  5. Drop spoonfuls of dough onto an ungreased cookie sheet.
  6. Bake for 12 minutes or until lightly golden.
  7. Allow cookies to cool slightly before transferring to a wire rack.
