Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 2/3 cup Karo light corn syrup
  • 1/2 cup Mazola corn oil
  • 1 cup ripe bananas, mashed
  • 1 cup chopped dates
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease and flour a 9 x 5 x 3-inch loaf pan.
  3. In a bowl, combine flour, baking powder, and salt.
  4. In a separate bowl, beat at medium speed the eggs, corn syrup, and corn oil.
  5. Add mashed bananas to the egg mixture and beat until combined.
  6. Stir in the flour mixture until just moist.
  7. Fold in chopped dates and walnuts.
  8. Pour batter into prepared loaf pan.
  9. Bake for 60 to 70 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool slightly before removing from pan and serving.
