Ingredients

  • 5 large ripe bananas, mashed
  • 1 egg
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 c. sugar
  • 1/2 c. butter, softened
  • 1 1/2 c. flour
  • 1 c. chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 375°F.
  2. Mix all ingredients except flour until well combined.
  3. Gradually add flour, stirring lightly until just incorporated.
  4. Pour batter into muffin cups in muffin pans.
  5. Bake for 15 to 20 minutes or until golden brown.
