Ingredients

  • 1 cup sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup mashed banana
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup chopped nuts
  • 1/2 cup sour cream

Instructions

  1. Cream sugar and butter together until well combined.
  2. Add eggs one at a time, mixing well after each addition.
  3. Stir in vanilla extract and mashed bananas.
  4. Mix well to combine all wet ingredients.
  5. In a separate bowl, combine flour, salt, and baking soda.
  6. Gradually add the dry mixture to the banana mixture, 1/2 cup at a time, mixing after each addition.
  7. Stir in chopped nuts.
  8. Gently fold in sour cream until just combined.
  9. Pour the batter into a greased 9x5x3 inch loaf pan.
  10. Bake at 350°F (180°C) for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow to cool in the pan for 20 minutes before turning out onto a rack.
