Ingredients

  • 1 cup butter or margarine
  • 1 cup sugar
  • 2 eggs
  • 2 ripe mashed bananas
  • 1/2 cup buttermilk
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup oats
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9 x 13-inch pan.
  3. In a large mixing bowl, cream together the butter and sugar until well combined.
  4. Add eggs one at a time, beating after each addition.
  5. Mix in mashed bananas, buttermilk, and vanilla until smooth.
  6. In another bowl, whisk together oats, all-purpose flour, whole wheat flour, baking soda, and salt.
  7. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  8. Fold in chocolate chips.
  9. Pour batter into the prepared pan and smooth the top.
  10. Bake for approximately 35 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow to cool before slicing and serving.
