Ingredients

  • 2 cups sugar
  • 1/2 cup oil
  • 2/3 cup cold coffee
  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon Watkins nutmeg
  • 1/8 teaspoon allspice
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/2 cups applesauce
  • 2 cups raw diced apples
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/8 teaspoon ginger
  • 1/8 teaspoon cloves

Instructions

  1. Mix sugar, oil, cold coffee, eggs, and applesauce in a bowl.
  2. Add the dry ingredients: flour, baking soda, nutmeg, allspice, cinnamon, salt, ginger, and cloves, then mix all together.
  3. Stir in the diced raw apples.
  4. Pour the batter onto a cookie sheet suitable for food service.
  5. Bake at 350°F for 40 minutes.
  6. Allow to cool, then frost the cake.
