Barbecued Beef Stew

Ingredients

  • 3 lb. top round of beef, cut into 1/2-inch cubes
  • 3 Tbsp. olive oil
  • 1 clove garlic, chopped
  • 3 medium onions, chopped
  • 1 c. catsup
  • 1/2 c. vinegar
  • 1 tsp. curry powder
  • 1 tsp. paprika
  • 2 tsp. chili pepper
  • 1 Tbsp. brown sugar
  • 1 c. good beef stock
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. dry mustard

Instructions

  1. Brown beef in oil with garlic.
  2. Chop onions and add to the beef.
  3. Mix all remaining ingredients and pour over beef.
  4. Cover tightly and simmer about 1 1/2 hours or until the meat is tender. Makes 8 servings.
