Ingredients

  • 1 small onion, chopped
  • 1 small carrot, sliced
  • 1/4 teaspoon thyme
  • 1 bay leaf
  • 1 tablespoon chopped parsley
  • 2 tablespoons chopped celery
  • 3 tablespoons butter
  • 1 1/4 pounds shrimp
  • 4 1/2 cups chicken broth
  • 1/2 cup dry white wine
  • 1/4 cup raw rice

Instructions

  1. Saute onion, carrot, thyme, bay leaf, parsley, and celery in 2 tablespoons butter until browned.
  2. Shell and devein the shrimp.
  3. Cook the shrimp covered in 1 cup of chicken broth and white wine for 5 minutes.
  4. Strain the shrimp and broth.
  5. Combine the remaining broth with the sauteed vegetables and bring to a boil.
  6. Add rice to the boiling mixture.
  7. Cook the rice until tender, then add the cooked shrimp before serving.
