Barcelona Dog
Ingredients
- 4 ripe plum tomatoes, diced ⓘ
- 1 small white onion, diced ⓘ
- 1 cup canned corn kernels ⓘ
- 1 tsp. granulated sugar ⓘ
- 1 tsp. hot sauce
- 1 tsp. salt ⓘ
- 2 ripe avocados ⓘ
- 1 small onion, minced ⓘ
- 1 clove garlic, minced and mashed with 1/2 tsp. salt ⓘ
- 4 tsp. fresh lime juice, or to taste ⓘ
- 1/2 tsp. ground cumin ⓘ
- 1 fresh or pickled jalapeno chile, seeded and minced, optional ⓘ
- 3 Tbs. chopped cilantro, optional ⓘ
- 1 tsp. canola oil ⓘ
- 6 smoked vegetarian hot dogs ⓘ
- 6 buns ⓘ
- 3 oz. finely shredded cheddar cheese ⓘ
- 6 sprigs curly parsley ⓘ
Instructions
- To make Tomato-Corn Salsa: In bowl, gently mix ingredients until well blended.
- If there is extra liquid, drain salsa in fine mesh sieve.
- To make Guacamole: Peel and dice avocados.
- Place in glass, ceramic or other nonreactive mixing bowl.
- Mash with fork, and stir in remaining ingredients.
- To make Hot Dogs: Heat oil in nonstick skillet over medium heat.
- When hot, place dogs into skillet, and cook according to package directions.
- Do not overcook.
- Put hot dogs in buns.
- Spread guacamole along each hot dog, leaving ends exposed.
- Spoon Tomato-Corn Salsa over center.
- Sprinkle cheese over salsa.
- Garnish with sprig of parsley in center.
