Ingredients

  • 1/2 lb. mushrooms
  • 1/4 lb. butter
  • 2 medium onions
  • 1 3/4 c. pearl barley
  • 4 c. chicken broth

Instructions

  1. Saute mushrooms and chopped onions in half of the butter until tender.
  2. Place the sautéed mushrooms and onions in a casserole dish.
  3. Cook the remaining butter over low heat and stir in the pearl barley until almond colored.
  4. Add the toasted barley to the casserole with the mushrooms and onions.
  5. Pour chicken broth over all the ingredients in the casserole.
  6. Cover the casserole and bake at 350°F for 1 to 1 1/2 hours, removing the cover during the last half of cooking.
