Ingredients

  • 1/4 cup pearl barley
  • 1 small onion
  • 1 tablespoon butter

  • 6 cups or more soup stock
  • 1 tablespoon sour cream

Instructions

  1. Wash the pearl barley and cook in a large amount of lightly salted boiling water until tender.
  2. Meanwhile, cook the chopped onion in butter until lightly wilted.
  3. Add the diced carrots, celery, potatoes, and chopped mushrooms to the onion and cook for a few minutes.
  4. Pour in the soup stock and simmer until the vegetables are done.
  5. Strain the cooked barley and add it to the soup.
  6. Stir in the sour cream and bring the soup to a boil.
  7. Season with salt and pepper to taste.
  8. Garnish with dill or parsley before serving.
