Ingredients

  • 1 cup chopped onion
  • 1/2 cup chopped celery
  • 2 cloves garlic
  • 2 tablespoons butter or margarine
  • 2 (16 oz.) cans Italian tomatoes
  • 1/2 cup dry white wine
  • 1/2 cup minced parsley
  • 1/4 teaspoon thyme
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound frozen fish fillets

Instructions

  1. In a large saucepan or pot, sauté chopped onion, chopped celery, and crushed garlic in butter or margarine.
  2. Add chopped Italian tomatoes, white wine, minced parsley, salt, pepper, and thyme to the pan.
  3. Cover and simmer the mixture for 30 minutes.
  4. Add the fish fillets cut into 1-inch chunks and simmer for an additional 7 to 10 minutes until the fish flakes easily with a fork.
  5. Sprinkle with extra parsley and serve with green salad and crusty bread.
