Ingredients

  • 1/2 lb. lean pork
  • 1/2 lb. lean beef
  • 1 lb. gizzards
  • 2 sticks margarine
  • 2 large onion, chopped fine
  • 4 stocks celery, chopped fine
  • 2 cloves garlic, chopped fine
  • 1 can chicken bouillon
  • 1 Tbsp. Worcestershire sauce
  • Creole seasoning

Instructions

  1. Grind the pork, beef, and gizzards.
  2. Melt margarine in a Dutch oven and fry the ground meat until brown, about 20 minutes.
  3. Add chopped onions, celery, and garlic to the pot.
  4. Stir and cook until vegetables are soft.
  5. Add Worcestershire sauce, chicken bouillon, and 1 stick of margarine.
  6. Stir well to combine.
  7. Bring the mixture to a boil and simmer for about 2 hours.
  8. Season to taste before serving.
