- Preheat oven to 350°F.
- Combine all ingredients in a mixing bowl.
- Shape the mixture into a loaf and place in a lightly greased 4 1/2 x 8 1/2 x 2 5/8-inch loaf pan or shape in loaf form and place into a 1-quart greased baking dish.
- Bake for 45 to 60 minutes or until the meat is no longer pink in the center of the loaf.
- Unmold the meatloaf onto a platter.
- Top with sliced tomatoes and garnish with parsley, if desired.
