- In a Dutch oven, brown the boneless chuck roast in hot oil.
- Combine water, beer or broth, tomato sauce, chopped onion, sugar, vinegar, salt, cinnamon, bay leaf, pepper, and ground ginger; pour over the meat and bring to a boil.
- Reduce heat, cover, and simmer until the meat is tender, about 2 1/2 to 3 hours.
- Remove the meat from the Dutch oven.
- Discard the bay leaf.
- If desired, thicken the juices with cornstarch and water.
