Ingredients

  • 1 1/2 lb. sausage
  • 12 eggs
  • 3/4 lb. shredded Cheddar cheese
  • 1/2 large onion
  • green pepper
  • mushrooms
  • 1/2 pt. cream
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Fry sausage and drain well; grease a 9 x 13-inch pan.
  2. Break eggs into the pan and poke the yolks.
  3. Top the eggs with all of the sausage, half of the cheese, and all of the onion, green pepper, and mushrooms.
  4. Pour cream over all and sprinkle with the remaining cheese.
  5. Season with salt and pepper.
  6. Refrigerate overnight.
  7. Bake in a 350°F oven for 1 hour.
