  • 2 Tbsp. chopped parsley

  • 1/2 tsp. pepper

Instructions

  1. Wash and trim the okra, not too close to the top.
  2. Sprinkle the okra with lemon juice and let stand for 20 minutes.
  3. Make the sauce by lightly frying chopped onions in olive oil.
  4. Add stewed tomatoes, water, and chopped parsley to the onions and simmer for a while.
  5. Pour half of the tomato sauce into the bottom of a casserole dish.
  6. Drain the okra and place it on top of the sauce in the casserole.
  7. Cover the okra with the remaining sauce, season with salt and pepper.
  8. Cover and bake in a slow oven at 300°F (150°C) for 30 minutes until the okra is tender.
