Ingredients

  • 1 cup navy beans
  • 1 quart water
  • 4 slices bacon
  • 1 onion
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 cup potatoes
  • 1 cup celery
  • 1 (1 lb.) can stewed tomatoes
  • 2 tablespoons flour
  • 2 cups milk

Instructions

  1. Combine navy beans and water in a large kettle; bring to a boil and cook for 2 minutes.
  2. Remove from heat and let stand for 1 hour.
  3. Saute diced bacon and chopped onion until lightly browned.
  4. Add the bacon and onion with fat to the beans and simmer for 1 hour.
  5. Add salt, pepper, diced potatoes, diced celery, and stewed tomatoes; simmer for another 30 minutes.
  6. Gradually add milk to the flour to make a smooth mixture, then add to the soup.
  7. Bring the soup to a gentle boil to thicken.
