Ingredients

  • 1 lb. fresh pork sausage links
  • 1/2 c. butter or margarine
  • 1 1/2 c. finely chopped celery
  • 1/4 c. finely chopped onion
  • 17 oz. pkg. herb seasoned stuffing croutons
  • 1 (15 oz.) can kidney beans, drained
  • 2 tsp. chili powder

Instructions

  1. In a covered 10-inch skillet over medium-high heat, cook sausage and 1/4 cup cold water for 5 minutes.
  2. Remove cover; reduce heat to low.
  3. Cook sausages until browned, turning often.
  4. Drain on paper towels.
  5. Cut sausages into slices 1/4-inch thick.
  6. Cook celery and onion until tender, about 5 minutes.
  7. In a large bowl, combine croutons with 1 cup hot water.
  8. Add cooked sausage slices, drained kidney beans, chopped celery and onion, butter, chili powder, and mix well.
  9. Stuff into a 6 to 8 pound turkey.
