Ingredients

  • 1 2/3 cups cooked kidney beans or pink beans
  • 1/4 cup chopped green bell peppers
  • 2 tablespoons diced green chili
  • 1/4 teaspoon salt
  • 1/2 cup shredded Monterey Jack cheese
  • 6 (10-inch) flour tortillas

  • 1/2 cup peeled, finely chopped tomatoes
  • 1/4 cup chopped onions
  • 1 minced garlic clove
  • 2 tablespoons oil
  • 1 bottle hot pepper sauce
  • taco sauce
  • tomato wedges (optional)

Instructions

  1. Mash drained kidney or pink beans.
  2. Saute chopped tomatoes, green bell peppers, onions, green chilies, garlic, and salt in oil until thoroughly heated.
  3. Add the mashed beans, shredded Monterey Jack cheese, and hot pepper sauce to the sautéed mixture; mix well.
  4. Spoon the bean mixture onto each flour tortilla, then roll up to form burritos.
  5. Serve with sour cream, chopped tomatoes, and optional tomato wedges.
