Ingredients

  • 1 medium onion
  • 1/2 cup chopped green pepper
  • 2 (15 oz.) cans kidney beans, drained
  • 2 cups chopped cooked pork
  • 1 (12 oz.) can whole kernel corn, drained
  • 1 1/2 cups crushed tortilla chips
  • 3/4 cup bottled barbecue sauce
  • 2 to 3 teaspoons chili powder
  • 8 oz. jar American cheese spread

Instructions

  1. In a saucepan, cook the onion and green pepper in boiling water for 5 minutes or until tender; drain.
  2. Combine the cooked vegetable mixture, drained kidney beans, drained corn, crushed tortilla chips, barbecue sauce, and chili powder.
  3. Pour one-third of the meat mixture into an ungreased 2 1/2-quart casserole dish.
  4. Spread half a cup of American cheese spread over the meat layer.
  5. Repeat the layers, ending with the remaining meat mixture on top.
  6. Cover and refrigerate for up to 24 hours.
  7. Bake covered at 375°F for 1 hour and 15 minutes.
