Ingredients

  • 3 cups cooked beef, cut into 1-inch cubes
  • 3 large onions, peeled and quartered
  • 8 carrots, cut into 1-inch pieces
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 3 tablespoons tomato paste
  • 1 clove garlic, crushed
  • 1 bay leaf
  • 1/2 teaspoon basil
  • 1/4 teaspoon thyme
  • 10 ounces beef consomme or beef stock
  • 12 ounces beer
  • cooked noodles or rice

Instructions

  1. Melt butter in a large saucepot or Dutch oven.
  2. Add onions and cook for 5 minutes to brown slightly.
  3. Add carrots, herbs, and garlic. Continue to cook over medium heat for 10 minutes.
  4. Stir in flour, tomato paste, beef consomme, and beer.
  5. Add cooked beef and cover. Simmer for 30 minutes or until carrots are tender.
