Ingredients
- 3 cups cooked beef, cut into 1-inch cubes ⓘ
- 3 large onions, peeled and quartered ⓘ
- 8 carrots, cut into 1-inch pieces ⓘ
- 2 tablespoons butter ⓘ
- 2 tablespoons flour ⓘ
- 3 tablespoons tomato paste ⓘ
- 1 clove garlic, crushed ⓘ
- 1 bay leaf ⓘ
- 1/2 teaspoon basil ⓘ
- 1/4 teaspoon thyme ⓘ
- 10 ounces beef consomme or beef stock ⓘ
- 12 ounces beer ⓘ
- cooked noodles or rice ⓘ
Instructions
- Melt butter in a large saucepot or Dutch oven.
- Add onions and cook for 5 minutes to brown slightly.
- Add carrots, herbs, and garlic. Continue to cook over medium heat for 10 minutes.
- Stir in flour, tomato paste, beef consomme, and beer.
- Add cooked beef and cover. Simmer for 30 minutes or until carrots are tender.
