Ingredients

  • 1 lb ground beef
  • 1/4 cup oil
  • 2 tablespoons butter
  • 3/4 cup chopped onion
  • 1 clove garlic
  • 1 small eggplant, cubed
  • 2 cups cooked macaroni
  • 2 cups canned tomatoes
  • 1/4 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1/4 to 1/2 teaspoon salt
  • dash of pepper

Instructions

  1. Cook ground beef in a large skillet until browned, stirring often to crumble.
  2. Drain off excess fat and remove meat from the skillet, setting aside.
  3. In the same skillet, heat 1/4 cup oil and 2 tablespoons butter over medium heat.
  4. Add chopped onion and cook until softened.
  5. Stir in minced garlic and cook for another minute.
  6. Add cubed eggplant and cook until tender.
  7. Return cooked ground beef to the skillet.
  8. Stir in canned tomatoes, oregano, thyme, salt, and pepper.
  9. Cook for about 10 minutes to combine flavors.
  10. Meanwhile, cook macaroni according to package instructions and drain.
  11. Add cooked macaroni to the meat and vegetable mixture, stirring well.
  12. Transfer the mixture to a baking dish, sprinkle with shredded Monterey Jack cheese.
  13. Bake at 375°F (190°C) until cheese is melted and bubbly, about 15 minutes.
