Ingredients

  • 3 lb. meaty shin bone
  • 1 1/2 qt. cold water
  • freshly ground pepper
  • 3 Tbsp. barley
  • 3 carrots, finely chopped
  • 1 head cabbage, shredded
  • 2 ribs celery, finely chopped
  • 1 onion, chopped
  • 1 (28 oz.) can tomatoes
  • 6 c. beef or chicken broth

Instructions

  1. Place the meat in a kettle, cover with cold water, add seasoning, and heat slowly to boiling point.
  2. Cover and let simmer for 2 1/2 to 3 hours or until the meat is tender, skimming off fat as needed.
  3. Remove the meat and bone from the broth.
  4. Add barley and chopped vegetables to the broth.
  5. Continue cooking for 45 minutes until vegetables are tender.
