Ingredients

  • 3/4 lb. 93% ultra-lean ground beef
  • 1 cup chopped onion
  • 1 garlic clove, minced
  • vegetable cooking spray
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • 2 (8 oz.) cans no salt added tomato sauce
  • 1 (16 oz.) can pinto beans, drained
  • 1 (4.5 oz.) can chopped green chiles, drained
  • 3/4 cup skim milk
  • 1 egg, lightly beaten

Instructions

  1. Cook beef, onion, and garlic in a large saucepan coated with cooking spray over medium-high heat until browned, stirring frequently to crumble the beef.
  2. Drain the beef mixture in a colander.
  3. In a large mixing bowl, combine tomato sauce, pinto beans, chopped green chiles, skim milk, and beaten egg.
  4. Add chili powder, ground cumin, sugar, dried oregano, salt, and pepper to the mixture and stir well.
  5. Layer the beef mixture in a casserole dish and pour the bean mixture over it.
  6. Prepare cornbread batter according to your favorite recipe or package instructions.
  7. Spread the cornbread batter evenly over the casserole.
  8. Bake in a preheated oven at 375°F (190°C) for about 25-30 minutes until the cornbread is golden brown and cooked through.
