Ingredients

  • 2 cups uncooked radiatore pasta
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 cup frozen whole kernel corn
  • 1/2 cup mild taco sauce
  • 1 can (8 oz.) tomato sauce
  • 1 can (4 oz.) chopped green chilies, drained
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1 cup shredded Cheddar cheese
  • 1/2 cup shredded Mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C). Cook radiatore pasta according to package directions; drain.
  2. In a 10-inch skillet, cook ground beef and chopped onion, stirring occasionally, until browned, about 5 to 7 minutes; drain off fat.
  3. Stir in frozen corn, taco sauce, tomato sauce, drained green chilies, cumin, and salt.
  4. Add cooked radiatore to the beef mixture and stir to combine.
  5. Spoon the mixture into a greased 2-quart casserole dish.
  6. Sprinkle shredded Cheddar cheese and shredded Mozzarella cheese over the mixture in alternating rows to form 3 Cheddar and 2 Mozzarella strips.
  7. Bake for 25 to 30 minutes or until heated through and cheese is bubbly.
  8. Garnish with tomato wedges and avocado slices before serving.
