- Preheat oven to 375°F (190°C).
- In a medium skillet, brown the ground beef and drain excess fat.
- Add the broccoli, mozzarella cheese, chopped onion, sour cream, salt, and pepper to the skillet; mix well and simmer for 10 minutes.
- Separate the crescent dough into 4 long rectangles.
- On an ungreased cookie sheet, overlap the long sides of two rectangles by 1/2 inch and press edges to seal, forming a 13 x 7-inch rectangle.
- Spoon the meat mixture in a 3-inch wide strip lengthwise down the center of the dough.
- Bring the long edges of the dough over the meat mixture and seal by pinching the dough together.
- Brush the assembled Wellington with the beaten egg.
- Bake in the preheated oven at 375°F for 18 to 25 minutes until golden brown.
