Beef Burgundy(Vegetable Medley)
A hearty beef stew with vegetables and red wine, rich in flavors from bacon, garlic, and herbs, perfect for comforting family dinners or special occasions.
Ingredients
- 2 Tbsp. olive oil ⓘ
- 6 slices bacon ⓘ
- 2 lb. beef stew meat ⓘ
- freshly ground black pepper
- 10 small leeks
- 6 carrots ⓘ
- 6 medium parsnips or turnips
- 6 plum tomatoes ⓘ
- 1/2 cup Italian parsley ⓘ
- 2 Tbsp. sugar ⓘ
- 1 1/2 cups beef broth ⓘ
- 1 1/2 cups Burgundy wine ⓘ
- 2 Tbsp. unsalted butter ⓘ
- 2 tsp. dried thyme
- 6 small red new potatoes
- 6 cloves garlic ⓘ
- 2 Tbsp. currant jelly ⓘ
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat.
- Add bacon and cook until fat is rendered.
- Remove bacon and transfer to a heavy, flame-proof casserole.
- Brown beef in the skillet in small batches, sprinkling with black pepper.
- Remove beef and add to the casserole with bacon.
- In the same skillet, quickly sauté leeks, carrots, and parsnips or turnips, sprinkling with sugar to caramelize slightly.
- Remove vegetables from the skillet and set aside.
- Add garlic to the skillet and cook briefly until fragrant.
- Add beef broth and Burgundy wine to the skillet, scraping up any browned bits.
- Pour the liquid over the meat and vegetables in the casserole.
- Stir in chopped tomatoes, Italian parsley, dried thyme, and currant jelly.
- Add potatoes to the casserole.
- Cover and bake in the preheated oven for approximately 1.5 hours until meat is tender.
- Check seasoning and adjust with salt and pepper if needed.
- Serve hot, garnished with additional parsley if desired.
