Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 1 1/2 cups milk
  • 1/4 cup flour
  • 2 (4 oz) cans whole green chilies
  • 1 1/2 cups shredded cheese (Longhorn or Cheddar)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 eggs

Instructions

  1. Brown the ground beef and chopped onion in a skillet; drain off excess fat.
  2. Season the meat with salt and pepper.
  3. Cut the green chilies in half lengthwise and remove seeds.
  4. Arrange half of the chilies in a 10 x 6 x 1 1/2-inch baking dish.
  5. Sprinkle the chilies with shredded cheese.
  6. Top with the cooked meat mixture.
  7. Lay the remaining chilies over the meat.
  8. In a bowl, beat the eggs, milk, and flour together until smooth.
  9. Pour the egg mixture over the layered chilies and meat.
  10. Bake uncovered at 350°F for 40 to 45 minutes or until a inserted knife comes out clean.
  11. Cool for 5 minutes, then cut into squares and serve.
