Ingredients

  • 1 large onion, chopped
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 cup milk
  • 1 can mild enchilada sauce
  • 1 can hot enchilada sauce
  • 1 lb ground beef
  • 8 to 10 oz grated Cheddar cheese
  • 1 (4 oz) can chopped green chilies

Instructions

  1. Saute the chopped onion until translucent.
  2. Add the ground beef and cook until browned.
  3. Drain excess fat from the meat and onions.
  4. Add the cream of mushroom soup, cream of chicken soup, milk, enchilada sauces, and chopped green chilies to the beef mixture. Stir to combine.
  5. Cut the tortillas in half and separate into three groups.
  6. In a 13 x 9-inch dish, layer tortillas, meat sauce, and grated cheese. Repeat this layering three times.
  7. Bake in a preheated oven at 350°F (175°C) for 40 minutes until hot and bubbly.
