Ingredients

  • 1 lb ground beef
  • 1/3 cup chopped onion
  • 1 clove garlic, minced
  • 1/4 cup catsup
  • 3/4 teaspoon salt
  • 1 package corn bread mix (10 oz.)
  • 1/2 cup shredded American cheese
  • 2 tablespoons chopped green pepper
  • 2 tablespoons cold water
  • 2 teaspoons cornstarch
  • 1 can (8 oz.) tomatoes, cut up
  • 2 tablespoons chopped, seeded canned green chili pepper
  • 1 teaspoon Worcestershire sauce

Instructions

  1. In a skillet, cook the beef, onion, and garlic until the meat is browned.
  2. Drain off the fat.
  3. Stir in catsup and salt; set aside.
  4. Prepare the corn bread batter according to package directions or your own recipe.
  5. Spread half of the batter in a greased 8 x 8 x 2-inch baking pan.
  6. Spoon the beef mixture over the batter in the pan and sprinkle with shredded American cheese.
  7. Spread the remaining batter over the cheese layer.
  8. Bake uncovered at 350°F (175°C) until the cornbread is done, about 30 to 35 minutes.
  9. Let stand for 5 minutes before cutting and serving.
