Beef Pembronata
Ingredients
- 2 pounds beef chuck, boneless and cut into 1 inch cubes ⓘ
- 1 cup onion slices ⓘ
- 1/4 cup olive oil ⓘ
- 1/2 cup dry white wine ⓘ
- 2 tablespoons parsley ⓘ
- 1 teaspoon salt ⓘ
- 1/2 teaspoon dried thyme ⓘ
- 1/4 teaspoon savory ⓘ
- 2 tablespoons butter ⓘ
- 2 green peppers ⓘ
- 2 red peppers ⓘ
- 2 tomatoes, peeled and quartered ⓘ
- 1 tablespoon dry sherry ⓘ
- 2 onions, quartered
- 2 tablespoons olive oil ⓘ
- 1 green pepper ⓘ
- 1 red pepper ⓘ
- 1 cup dry red wine ⓘ
Instructions
- Saute beef and onion in oil until browned. Add next 5 ingredients. Cover and simmer for about 1 hour or until beef is tender.
- Saute peppers in butter until crisp tender. Add tomatoes and sherry. Reserve mixture.
- Saute quartered onions in oil until golden. Add remaining ingredients and stir until thick.
- Combine all three mixtures. Heat and serve over rice or noodles.
