Ingredients

  • 2 cups raw wild rice
  • 4 cups water
  • 2 teaspoons salt
  • 2 pounds ground beef
  • 1 pound mushrooms
  • 1/2 cup chopped celery
  • 1 cup chopped onion
  • 1/2 cup butter
  • 1/4 cup soy sauce
  • 2 cups dairy sour cream
  • 2 teaspoons salt
  • 1/4 teaspoon pepper

Instructions

  1. Gently cook wild rice with water and 2 teaspoons salt, covered, for 45 minutes.
  2. Drain the cooked rice.
  3. Brown the ground beef in a skillet.
  4. Rinse mushrooms, trim stems, and slice. Sauté with chopped onion and celery in butter for 5 to 10 minutes.
  5. Combine soy sauce, sour cream, salt, and pepper in a bowl.
  6. Add cooked rice, browned beef, mushroom mixture, and chopped almonds; toss lightly.
  7. Transfer the mixture to a 3-quart casserole dish.
  8. Bake uncovered at 350°F (175°C) for 1 hour.
  9. Add water if needed during baking to prevent dryness.
  10. Season to taste and stir several times during baking.
  11. Garnish with a few almonds before serving.
