- Lightly but thoroughly combine ground beef, bread crumbs, egg, 1 teaspoon salt, and pepper.
- Combine defrosted and drained chopped spinach, 1/2 cup shredded Mozzarella cheese, Parmesan cheese, Italian seasoning, remaining salt, and garlic powder.
- Place beef mixture on wax paper and pat into a 14 x 10-inch rectangle.
- Spread spinach mixture over beef, leaving 3/4 inch of edge on all sides.
- Roll from the short end to form a log.
- Press beef over the ends to seal.
- Place the loaf seam side down in a baking dish.
- Bake at 350°F for 1 hour, then spread catsup over the top and bake for an additional 15 minutes.
- Sprinkle remaining Mozzarella cheese over the loaf before serving.
