Ingredients

  • 1 1/2 lb. ground beef
  • 3/4 cup soft bread crumbs
  • 1 egg
  • 1 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 10 oz. frozen chopped spinach, defrosted and drained
  • 3/4 cup shredded Mozzarella cheese
  • 3 Tbsp. Parmesan cheese
  • 1 tsp. Italian seasoning
  • 1/8 tsp. garlic powder

Instructions

  1. Lightly but thoroughly combine ground beef, bread crumbs, egg, 1 teaspoon salt, and pepper.
  2. Combine defrosted and drained chopped spinach, 1/2 cup shredded Mozzarella cheese, Parmesan cheese, Italian seasoning, remaining salt, and garlic powder.
  3. Place beef mixture on wax paper and pat into a 14 x 10-inch rectangle.
  4. Spread spinach mixture over beef, leaving 3/4 inch of edge on all sides.
  5. Roll from the short end to form a log.
  6. Press beef over the ends to seal.
  7. Place the loaf seam side down in a baking dish.
  8. Bake at 350°F for 1 hour, then spread catsup over the top and bake for an additional 15 minutes.
  9. Sprinkle remaining Mozzarella cheese over the loaf before serving.
