Ingredients

  • 1 envelope dried onion soup mix
  • 1 lb. ground beef
  • 1 c. undiluted evaporated milk
  • 1/2 c. fine dry bread crumbs
  • 1 tsp. salt
  • 4 c. thinly sliced peeled potatoes
  • 1 tsp. dried parsley flakes (optional)
  • 1/4 lb. Cheddar cheese, grated
  • paprika

Instructions

  1. Stir the dried onion soup mix well and add 3 tablespoons to the ground beef, evaporated milk, bread crumbs, and 1/2 teaspoon of salt. Mix lightly but thoroughly and spread evenly in a shallow 2-quart baking dish.
  2. Mix the remaining soup and salt with the sliced peeled potatoes and parsley flakes, if desired.
  3. Arrange the potato mixture evenly on top of the meat mixture.
  4. Cover with a lid or foil and bake in a moderate oven (350°F) for 1 hour.
  5. Uncover and sprinkle grated Cheddar cheese over the top.
  6. Bake for 15 minutes longer and then sprinkle with paprika before serving.
