Ingredients

  • 1/4 lb. lean ground beef
  • 1 c. onion, sliced
  • 1/2 c. celery, chopped
  • 1 bay leaf
  • 1 1/2 c. potatoes, sliced
  • 2 tsp. parsley, chopped
  • 3 c. water
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 whole cloves
  • 1/2 c. carrots, shredded

Instructions

  1. Brown the ground beef in a hot 2-quart saucepan, turning carefully as needed to brown on all sides. Keep the meat in chunks.
  2. Drain the fat from the beef.
  3. Add water, sliced onion, chopped celery, bay leaf, whole cloves, salt, and pepper to the beef.
  4. Bring to boiling point, then reduce heat and cook slowly for 30 minutes.
  5. Add sliced potatoes, shredded carrots, and chopped parsley to the soup.
  6. Cook until the potatoes are tender, about 15 minutes.
  7. Remove the bay leaf and cloves before serving.
