- Combine dill pickles, bacon, onion, carrots, and parsley in a bowl.
- Mix well to distribute ingredients evenly.
- Pound the round steak to a thin, even layer.
- Spread the mixture on each slice of beef.
- Season with salt and pepper.
- Roll each slice tightly and secure with toothpicks or kitchen twine at each end and in the middle.
- Place the rolled beef in a casserole dish.
- Add consomme and red wine to the dish.
- Simmer uncovered for 1 1/2 hours at 350°F (175°C).
- Remove rouladen from the dish and set aside.
- Add 1 cup of water and 1/2 cup flour to the dish juices to thicken the gravy.
- Stir well and cook on the stovetop until the gravy thickens.
- Serve the beef rouladen with German red cabbage and potato dumplings.
