Beef Rouladen offers tender rolled beef filled with a savory pickle and bacon mixture, simmered in rich red wine and consomme, perfect for hearty, traditional German dinners.

Ingredients

  • 2 dill pickles, finely chopped
  • 6 strips bacon, finely chopped
  • 1 large onion, finely chopped
  • 2 carrots, grated
  • 1/4 cup fresh parsley, finely chopped
  • 6 thin slices beef (round steak)
  • salt and pepper
  • 1 can consomme or 1 cup boiling water
  • 1/2 cup dry red wine
  • oil
  • flour

Instructions

  1. Combine dill pickles, bacon, onion, carrots, and parsley in a bowl.
  2. Mix well to distribute ingredients evenly.
  3. Pound the round steak to a thin, even layer.
  4. Spread the mixture on each slice of beef.
  5. Season with salt and pepper.
  6. Roll each slice tightly and secure with toothpicks or kitchen twine at each end and in the middle.
  7. Place the rolled beef in a casserole dish.
  8. Add consomme and red wine to the dish.
  9. Simmer uncovered for 1 1/2 hours at 350°F (175°C).
  10. Remove rouladen from the dish and set aside.
  11. Add 1 cup of water and 1/2 cup flour to the dish juices to thicken the gravy.
  12. Stir well and cook on the stovetop until the gravy thickens.
  13. Serve the beef rouladen with German red cabbage and potato dumplings.
