Ingredients

  • 1 1/2 lb. round steak
  • 1/3 cup Parmesan cheese, grated
  • 1/3 cup bread crumbs
  • 1 egg
  • 1/3 cup oil
  • 1 medium chopped onion
  • 6 oz. tomato paste
  • 2 cups hot water
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon pepper
  • basil
  • thyme
  • oregano

Instructions

  1. Pound the steak to 1/4-inch thickness and trim off any fat.
  2. Cut the steak into pieces and combine Parmesan cheese and bread crumbs in a shallow dish.
  3. Dip each piece of meat into the beaten egg, then roll in the breadcrumb mixture.
  4. Heat oil in a skillet over medium heat and brown the coated meat on both sides.
  5. Transfer the browned meat to a shallow baking pan.
  6. Add chopped onion to the skillet and cook until translucent.
  7. Stir in tomato paste, hot water, salt, sugar, pepper, and herbs; bring to a boil.
  8. Cook the sauce for 5 minutes, scraping the pan to blend in browned bits.
  9. Pour the sauce over the meat in the baking pan.
  10. Reserve a small amount of sauce for topping.
  11. Cover the meat with mozzarella cheese and sprinkle remaining sauce on top.
  12. Bake in a preheated oven at 350°F for 1 hour until the cheese is melted and bubbly.
