Beef Steak Provencale

Ingredients

  • 2 Tbsp. all-purpose flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 1/2 lb. beef boneless round steak
  • 1 Tbsp. oil
  • 1/2 c. water
  • 2 cloves garlic
  • 1/2 c. olives
  • 6 medium carrots
  • 2 medium onions
  • 2 Tbsp. snipped parsley

Instructions

  1. Mix flour, salt, and pepper in a small bowl.
  2. Sprinkle half of the flour mixture on one side of the beef steak and pound it in.
  3. Turn the beef and sprinkle with the remaining flour mixture, then pound it in on the other side.
  4. Heat oil in a large skillet over medium heat.
  5. Add the coated beef and brown on both sides.
  6. Add garlic and cook for 1 minute.
  7. Pour water into the skillet, scraping up any browned bits.
  8. Add olives, carrots, and onions to the skillet.
  9. Bring to a simmer, cover, and cook for about 45-60 minutes until beef is tender.
  10. Garnish with snipped parsley before serving.
