Ingredients

  • 2 Tbsp. butter
  • 1 1/4 lb. beef cubes
  • 1 bay leaf
  • 2 c. beef broth
  • 2 Tbsp. flour
  • 1/2 c. plain yogurt
  • 1 onion, chopped
  • salt and pepper to taste
  • 1 1/2 tsp. red wine vinegar
  • 8 oz. pasta twists

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter in a Dutch oven over medium heat.
  3. Add chopped onion and sauté until translucent.
  4. Add beef cubes and brown on all sides.
  5. Add salt, pepper, bay leaf, red wine vinegar, and beef broth. Cover tightly and bake for 2 hours.
  6. Cook pasta following box directions until al dente.
  7. Remove pan from oven; discard bay leaf.
  8. Blend flour with softened butter to form a paste.
  9. Stir the flour-butter mixture into the beef stew.
  10. Simmer on stove for 2 minutes, stirring constantly until the sauce thickens.
  11. Add yogurt and cooked pasta; mix well and serve.
