Ingredients

  • 1 large clove garlic
  • about 12 onions
  • 1 1/2 bunches carrots
  • 3/4 lb beef stew meat
  • about 1 1/2 cans undiluted consomme
  • 1 large bay leaf
  • 2/3 cup dry red wine
  • margarine
  • flour

Instructions

  1. Brown garlic in margarine; remove and discard.
  2. Brown onions, then transfer them to a casserole.
  3. Brown carrots and add them to the casserole.
  4. Dust beef stew meat with flour, pepper, and salt, then brown the meat.
  5. Return all ingredients to the skillet, add red wine, undiluted consomme, and bay leaf.
  6. Mix all ingredients well and transfer to the casserole.
  7. Cover and simmer in a 350°F oven for about 4 hours.
  8. Stir occasionally to prevent top from over-browning.
  9. Check the sauce; if it is drying out, cautiously add more liquid to thicken properly.
