Ingredients

  • 1 medium acorn squash
  • 1/2 lb ground beef
  • 2 Tbsp chopped onion
  • 2 Tbsp chopped celery
  • 2 Tbsp flour
  • 1/4 tsp salt
  • 1/4 tsp ground sage
  • 3/4 c milk
  • 1/2 c cooked rice
  • 1/4 c shredded Cheddar cheese

Instructions

  1. Pierce the whole acorn squash several times with a fork and place on a paper towel.
  2. Microwave on High until tender, about 7 to 8 minutes, turning after 4 minutes. Set aside to cool slightly.
  3. Cut the squash in half and remove the seeds.
  4. In a skillet, cook ground beef with chopped onion and celery until beef is browned and vegetables are tender.
  5. Stir in flour, salt, and ground sage; cook for 1 minute.
  6. Gradually add milk, stirring constantly, until the mixture thickens.
  7. Mix in cooked rice and shredded Cheddar cheese.
  8. Fill the acorn squash halves with the beef mixture.
  9. Place the stuffed squash on a baking sheet and bake at 375°F (190°C) for about 15 minutes or until heated through and cheese is melted.
