Beef Stuffed Acorn Squash

- Pierce the whole acorn squash several times with a fork and place on a paper towel.
- Microwave on High until tender, about 7 to 8 minutes, turning after 4 minutes. Set aside to cool slightly.
- Cut the squash in half and remove the seeds.
- In a skillet, cook ground beef with chopped onion and celery until beef is browned and vegetables are tender.
- Stir in flour, salt, and ground sage; cook for 1 minute.
- Gradually add milk, stirring constantly, until the mixture thickens.
- Mix in cooked rice and shredded Cheddar cheese.
- Fill the acorn squash halves with the beef mixture.
- Place the stuffed squash on a baking sheet and bake at 375°F (190°C) for about 15 minutes or until heated through and cheese is melted.
