Ingredients

  • 4 large green peppers
  • 1 lb ground beef
  • 1 medium onion
  • 1 (8 oz) can tomato sauce
  • 1 (8 3/4 oz) can whole kernel corn, drained
  • 2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 cup shredded Cheddar cheese

Instructions

  1. Cut off tops of peppers; remove seeds.
  2. Cook peppers 5 minutes in boiling water; drain.
  3. Cook ground beef and onion in large skillet until browned; drain well.
  4. Stir in tomato sauce, drained corn, chili powder, and salt.
  5. Stuff peppers with meat sauce mixture; place in a baking dish.
  6. Bake at 350°F for 15 minutes.
  7. Sprinkle top with shredded Cheddar cheese.
  8. Bake an additional 5 minutes until cheese is melted.
